Ris Opens Monday

Nearly four years after departing 1789 , chef Ris Lacoste will finally open her eponymous restaurant Monday, Dec. 7 at 2275 L St. NW . Ris will offer an American menu, featuring dishes like rabbit stew, lamb shank, Nantucket Bay scallops, grilled octopus, sardines, grilled Portuguese skirt steak and fall vegetable Wellington. Regular daily specials include meatloaf on Mondays and Little Italy on Wednesdays (read: spaghetti and meatballs and pistachio chocolate cannolis). On Thursdays, Lacoste will serve her signature rack of lamb — you may recall its deliciousness from 1789. “I’m excited to be back coaching my staff, welcoming my guests with delicious food, and presenting an ambiance to make them happy,” Lacoste says in a release. The space holds 240 seats, spread over a bar, cafĂ© and various seating areas. Come spring, a patio will add an additional 60 seats. New Sweet Spots

Chocolates from Artisan Confections. Hold onto your sweet tooth, folks. The DC area has a host of new spots to get your sugar fix. First up, one of my favorite chocolatiers, Artisan Confections , has moved into a handsome new spot (below) in the Zoso Flats building at 1025 N. Fillmore St. in Arlington. The chocolate shop's neighbors will include the forthcoming Screwtop Wine Bar and, another spot to hit for a sugar rush, Bakeshop DC , serving cupcakes, cookies and other desserts. Speaking of cupcakes, Georgetown Cupcake on Bethesda Row (4834 Bethesda Ave.) held its grand opening Sunday. Young & Hungry's Tim Carman ran into the massive line waiting for free cupcakes and snapped some photos. Rick's Picks Smokra Prosciutto Rolls

Photo: Rick's Picks I've already professed my love of Rick's Picks , and of all the email clogging my inbox, I always look forward to the occasional recipe ideas the pickle company sends out. One of the latest suggestions is an hors d'oeuvre after my own heart. And just in time for Thanksgiving entertaining. This Southern girl has a slight obsession with pickled okra, and Rick's Smokra with smoked Spanish paprika is a tasty twist on what I grew up with. But wrap those puppies in prosciutto, and wow, you've really upped the savory ante. Rick also has a great leftover turkey panini recipe, using the green tomato condiment . (Get the pickle products at Whole Foods.)

Antonio Burrell was named chef de cuisine of 14th Street's new Masa 14 , a joint venture of chefs Kaz Okochi and Richard Sandoval, this summer. Burrell was most recently chef de cuisine of CommonWealth gastropub. He also headed the kitchens at the now-shuttered Viridian and Eleventh Street Lounge in Arlington, and worked for six years at Vidalia and Bistro Bis . These are his Five Bites. 1. The Passenger Opens Tonight

Though the place hasn't been spit-polished, brothers Derek and Tom Brown are throwing open the doors to The Passenger (1021 Seventh St. NW), their first solo venture, this evening at 5 p.m. The new joint is kind of a neo-speakeasy version 2.0. It subtly nods to the Prohibition era (Derek was donning a vest at last night's preview) but it's a less contrived, more relaxed take on the trendy genre. Sure, you can snag a well-balanced craft cocktail the Brown brothers are known for. But there's also Miller High Life, plenty of canned beer, beef jerky (albeit artisanal ) by the stick, and a delicious kimchi hot dog (left). Oh, and there's isn't a cocktail menu. "I appreciate cocktail lists for what they are, but they don't really tell you what a drink's going to taste like," Tom explained. Like it, love it or gimme a big ol' eye roll, the cupcakes and gourmet burgers just won't quit. On the burger front, Eater posted a video of former Top Chef contestant Richard Blais (right) telling NBC Washington's Lindsay Czarniak that he's hoping to open a Flip Burger Boutique around the Verizon Center next spring. Flip Burger serves some eclectic spins on the classic like a Southern burger with a country fried beef patty, pimento cheese, pickles and green tomato ketchup and non-beef options including crab, tuna and lamb burgers. But will his liquid nitrogen Krispy Kreme milkshake give fellow Top Chef alum Spike Mendelsohn's toasted marshmallow shake at Good Stuff Eatery a run for its money? Small Fish, Big Pond

I have a tiny fish fetish. At home, my new pre-dinner snack routine goes like this: uncork a bottle of wine, pop a few pieces of crusty bread in the toaster, and crack into a can of Casa Lusa Portuguese sardines. Drizzle the toasted bread with olive oil, spoon a few hunks of sardine over top, and enjoy. I've come a long way from the days when, nose wrinkled in distaste, I'd stare in disbelief at my dad as he downed a can of sardines packed in mustard. Small fish — anchovies, herring, sardines — are getting some good press lately. The oily little guys are fabulously healthy thanks to high levels of omega-3s and a sustainable choice. Jane Black checked in on the Sardinista movement for The Washington Post this summer, with some great recipes. Health benefits and sustainability aside, they're also really damn tasty. Last night's sold-out and jam-packed Capital Food Fight was a huge success, raising more funds for DC Central Kitchen than ever before. This year's event was particularly star-studded, thanks to the addition of a few newly minted local cheflebrities, courtesy of Bravo's "Top Chef." Mike Isabella of Zaytinya and Bryan Voltaggio of Volt , both contestants on the current season, competed, while last season's local favorite, Carla Hall, served as a judge. Mike Isabella won his first match against Willow chef Tracy O'Grady, but lost to Michael Mina in the second round. Rounding out the cast of characters was event co-chair and always-entertaining host José Andrés, co-host Anthony Bourdain, and judges Eric Ripert, Ted Allen and Hook owner Jonathan Umbel. This spring, the husband and wife team of Todd and Nicole Wiss, who met while working at Poste , took over Mount Pleasant pizzeria Radius . Chef Todd Wiss, a graduate of the Culinary Institute of America, has added a focus on local and sustainable ingredients to the menu. Daily from 5-7 p.m., you can score a slice of cheese pizza and a pint of any draft beer for a mere $5. On Wednesdays, you can get a free bottle of wine, per couple, when you order a large pie and appetizer or two entrees and an appetizer. But if you've never caught an episode of Chefs A'Field , you're missing out. Now in its fourth season, the Emmy-nominated series is the creation of local producers Heidi Hanson and Chris Warner. Chefs A'Field takes some of the country's top chefs to the source of foods, and then back to the kitchen for a cooking lesson. There's a strong focus on sustainable agriculture and seafood. Chef and sustainable seafood advocate Barton Seaver is currently head chef at Glover Park's Blue Ridge , and he's preparing to open Diamond District Seafood Co. , a combo restaurant and seafood market, at 1612 14th St. NW. The fiercely proud DC native (he grew up in Mount Pleasant) graduated from the Culinary Institute of America, and after traveling and cooking in Spain and Morocco, came back to DC and began working at Jaleo . Warm It Up

Roof Terrace this week ( plush blankets thoughtfully included) to sample barman Justin Guthrie's wintry creations, including the hot "not" chocolate, a creamy blend of spiced rum, vanilla, milk and cocoa-dusted marshmallows. (They've got the traditional stuff, too.) For the intimate media cocktail preview , Guthrie also whipped up a drink featuring an ingredient I can't say I've ever had in a cocktail, however commonplace — peanut butter. The hot peanut buttered rum (at left) takes booze, infuses it with peanut butter, adds a little butter, clove, cinnamon and whipped cream topped with crushed peanuts — all to delicious effect. All winter cocktails are $10. Wednesday's Delicious Deal: Zola Wine & Kitchen

Photo: Fredde Lieberman For its new Lunch with the Chef series, Zola Wine & Kitchen is offering a $12 meal featuring your choice of homemade soups or salads with a sandwich or entrée. Executive Chef Bryan Moscatello (also of Zola and Potenza ) is inviting patrons into the test kitchen, Monday through Friday from 11:30 a.m. to 2 p.m., for the new lunch deal. Choices include a local roast beef sandwich with Fontina cheese and blood orange mayo, house-cured apple smoke BLT, and a mini veal meatball sub. Moscatello is also offering a daily special for $10. This Thursday's is porcini fusilli with truffled brie cheese. Friday is chicken fried steak with mashed potatoes. Check the site for menu specials and see the regular lunch menu here [PDF].

Fried Chicken Is The New Pork Belly

(I hope this is not an either/or situation.) "Fed up with globs of pig fat from undercooked pork belly?" the report asks. "Say hello [to] new-fangled fried chicken — crisped in all sorts of inventive ways by lowly diner cooks and exalted chefs alike." The report cites as evidence the fried chicken nights at Ad Hoc in Yountville and Locanda Verde in New York, the $100 fried chicken dinner at Momofuku , and the rise of Korean fried chicken. Trend Alert: A Root Revival

A new spirit created by a team out of Philadelphia is drumming up some big buzz. Root , an organic 80 proof liqueur that aspires to resurrect root beer's colonial predecessor root tea , has already gotten ink in Vanity Fair and Gourmet (RIP). And hey, I flow with the trends, so now I wanna try some. Root, from Art in the Age , is distilled from organic sugar cane and gets its flavor from birch bark, smoked black tea, sassafras essence, orange and lemon peel, allspice, anise, cloves, cinnamon, cardamom and nutmeg. The creators call it "a truly interesting and contemplative quaff. Certainly like nothing else we have ever tasted before. It is NOT Root Beer flavored vodka or a sickly sweet liqueur." (Thank goodness.) And it reportedly plays well with others. Cocktail recipes on the site include a Root de Pina , the Royal Apple with whisky and a spin on a hot toddy .
