Chef Five Bites: Olivier Perret
A native of Burgundy, France, Olivier Perret was named executive chef of Ici Urban Bistro in the Sofitel in May. Perret developed a passion for fresh produce while working at his family’s produce stands at farmers markets throughout Burgundy. After cooking school, he worked at the acclaimed Restaurant La Tassée in Lyon and later worked at French restaurants in Canada and the United States, including Restaurant Renoir at the Sofitel Montreal and Café des Architectes in Chicago.
